摘要

The National Shellfish Sanitation Program (NSSP) is concerned with the sanitarycontrol of fresh and frozen molluscan shellfish (oysters, clams, mussels, and scallops) offered for sale in interstate commerce. The FDA is responsible for the administration of the NSSP, which is a voluntary program involving state shellfish control officials, the shellfish industry, and other Federal agencies. The revision of the NSSP Manual was developed in cooperation with the Interstate Shellfish Sanitation Conference to assure that only safe and sanitary shellfish are offered for sale in interstate commerce. The 1992 revision contains newly adopted inspection criteria for use by state officials when certifying shellfish processors. Major topics include: general administration of a state program, certification procedures, shellfish packing, identification and depuration.
