Culinary practices and regional speciality foods: an exploratory research on consumers.

Results from an exploratory analysis of consumers' quality conceptions and attitudes towards regional speciality foods [in Italy] are presented. Textual analysis of transcripts of four focus group discussions shows a range of differentiated attitudes towards these foods. Two main consumption approaches are evident from the analysis: (1) a "domestic" dimension, according to which consumption of regional specialities is embedded in routine and banal culinary practices; and (2) an "aesthetic" dimension, whereby regional food consumption becomes a way to express consumer lifestyle and a source of social distinction. Both dimensions, although with different traits, seem to suggest a process of "re-traditionalization" of food consumption.
