When Michael Simonetta's father Tony first started Perfection Fresh, "we were a tradi-tional wholesaler," he said. "Basically, price was the only difference." They discovered that the average consumer is older, ethnically diverse, has more money to spend on food, wants more options, is looking for consistency, is snacking more, cooking less and is time-poor.
