The global demand for organically produced food is rising. In 2007, the organic food market in the UK was estimated to be worth over £2 billion - an increase of 22% since 2005. The UK organic market is now the third largest in Europe after Germany and Italy. Fruit and vegetables comprise the largest sector of organic foods in the UK, closely followed by dairy products. The shift in demand among consumers from conventionally to organically produced foodstuffs appears to have arisen, at least in part, from a belief that organically produced foodstuffs are healthier and have a superior nutrient profile than conventionally produced foodstuffs.
