The prevalence of type 2 diabetes mellitus (type 2 DM) has been increasing rapidly worldwide; thus, knowledge of risk factors and protective factors associated with type 2 DM is essential for the development of prevention strategies. Legumes—including beans, lentils, peanuts, peas, and soybeans—are good sources of fiber and have a low-glycemic index. It has been postulated that a diet high in legumes may be beneficial for the prevention of type 2 DM.
