Consumer concerns about the safety of poultry meat are growing as incidence of food poisoning grow. The poultry industry has to address the issue and find ways of reducing the risks from pathogens such as Salmonella, Campylobacter and Listeria. The poultry industry is facing threats and these are only because of the environmental aspects of poultry production or the pressure from animal welfare groups. As important is the pressure from consumers and consumer groups on governments, nationally and internationally, and industries in relation to aspects of food safety. Where hygiene is concerned, these consumer concerns relate to the presence of potentially pathogenic microorganisms, such as Salmonella and Campylobacter, in the many reported cases of poultry-borne human food poisoning.
