摘要

Prior to slaughter turkey are exposed to stress because of removal from their familiar environment, deprivation from food and transport itself. The results of this investigation indicate that transport distance influences the rate of glycolysis less compared to the total duration of the turkey's stay in the transport cages. Food withdrawals for more than thirteen hours before slaughter should be avoided since the reduced glycogen reserves in the breast muscle favour higher final pH-values in that retail chop.
