Mautner Markhof, a Vienna-based gourmet food producer of long-standing tradition, produces its well-known Hesperiden vinegar since 1927. The recipe was developed in-house - a mixture of distilled vinegar, wine vinegar and apple juice with an acid content of 7.5 %, representing a milder-tasting alternative to the sour table vinegar predominant at the time. Hesperiden vinegar has proven very popular and has become an irreplaceable ingredient of Viennese cuisine. However, each bottle of Hesperiden vinegar is the result of an elaborate production process in which density measurement plays a vital role.
