Consumer and sensory scientists have developed vocabularies for their respondents to use, but these have not been developed in a rigorous manner, and the handling of comments rather than scores also poses problems. It is also necessary to compare the use of different vocabularies applied to the same samples. This article summarizes 4 workshop presentations, with the aim to showcase some ways in which researchers are tackling these problems. Different methods for analysing textual data are described. Alternatives to conventional external preference mapping based on this type of data are proposed. Finally, a linguistic approach to describe consumer and sensory vocabularies is presented..
