Emerging preservation technologies for poultry and poultry products

Poultry meat is rapidly establishing itself as the leading meat source worldwide. World poultry meat production is forecast to expand by 7% in 1998, pushing the total up by nearly 4.4 million mt to 67 million tonnes. Poultry meat consumption has doubled in the last two or three decades. Developments in further-processing and the introduction of new processed products have contributed greatly to this growth trend. Production and trade of poultry products is fast emerging in many developing countries, including India. With rising population and prosperity, the demand for processed foods is expanding and diversifying. The growing demand for high quality processed foods is driving the industrial houses to adopt novel preservation techniques with the aim to extend the shelf-life as well as to preserve tile sensory and nutritional value of poultry products.
