Reinterpretation of Microbial Survival Curves

There is a need for a consistent approach that allows the equivalence of different control measures for the safe production of food to be established. Obstacles to the commercial use of new or different processes for food production often include thelack of systematic kinetic-inactivation data, interpretation of non-linear death kinetics and the need to establish equivalent control measures. The use of food-safety objectives and performance criteria can provide the basis for assessing equivalency of different processes that allow for the same level of consumer protection.
