It is well-known that total plasma cholesterol, low density lipoprotein (LDL) and the high density lypoprotein (HDL)/low density lipoprotein (LDL) ratio are associated with coronary artery disease. Wang and Pan, 2003 (Journal Agriculture and Food Chemistry 51:4824-4829) in the Department of Agricultural Chemistry, National Taiwan University have recently investigated the affect of red mold rice supplements on serum and egg yolk cholesterol of laying hens. They determined the effect of different concentrations of red mold rice supplementation on egg quality, laying performance, serum cholesterol, serum triglyceride, HDL, LDL, serum lipid peroxidation and egg yolk cholesterol.
