Preliminary evaluation of longfin and shortfin eels for semi-intensive pond-based aquaculture

"It's a bloody rotten eel!" A typical reaction of many Aussie fishermen to catching an eel. Due to the physical appearance of these fish very few of us have gone out of our way to experience their culinary delights. Those who have sampled the tender white flesh may not be surprised to learn that the much-maligned freshwater eel is considered a delicacy in many countries. In Japan alone, over 100,000 tonnes of cultured eel products are consumed annually.
