Unless you are a 'Sandgroper', you've probably never tasted one of Vince and Teresa Borrello's creations. That's because Borrello Cheese doesn't travel too far from Oakford, a quiet suburb 35 km south of Perth. And the Borrellos wouldn't have it any other way. Borrello Cheese was founded by Vince's father, Santo, a dairy farmer who moved to Perth from Sicily in the mid-1950s. Santo and his wife Maria sold most of their milk to National Foods, and whatever was left they turned into ricotta and romanocheese. Cheesemaking came naturally to the Borrellos. "Many Italians come from a farming background, like my parents did," Vince said. "They start with what they know and they go from there."
