This study used mung bean grains as raw materials and controlled germination using a biotechnological approach that activates glutamic acid decarboxylase and polyamine oxidase in the progress of green bean sprouting. Nitrogenous substances like glutamic acid and polyamine in grains were translated to gamma-aminobutyric acid (GABA) and enriched. Results showed that the optimum conditions for GABA enrichment in mung bean germination include the following: pH, 5.0; culture temperature, 30 degrees C; and stress time, 24 h. Under these conditions, GABA content increases to 244.1 mu g/g FW. During hypoxia stress training, the addition of NaCl, VB6, and CaCl2 contributes to GABA enrichment. The best proportions consist of 30 mmol/L NaCl, 70 mu mol/L VB6, and 10 mmol/L CaCl2. Under these conditions, GABA content increases to 302.4 mu g/g FW.
