Role of barley as a source of soluble fibre is discussed, with particular reference to recent development of a German waxy winter barley variety with increased beta-glucan contents. Initial studies show that barley flour from this variety contains on average >6% beta-glucans, with some milling streams containing >10%, and can thus help meet health claim recommendations for daily consumption of 3 g of soluble beta-glucan to reduce plasma cholesterol levels and risk of cardiovascular disease. The new barley variety also contains only approx. 5% amylose, leading to specific functional properties.
