An old professor at college used to be fond of saying "If you hang on to the cow's tail during hard times she'll pull you through." This was mv introduc-tion to a course on beef production. A contemporary publication called Beef Farming in Ontario ventured the unfounded opinion that one needed a herd of at least 25 beef cows to make a decent farm income. Even in those days, now 60 years ago, I was skeptical. The professor was also a farmer, but a dairy farmer, and even at the modest professorial salaries of the day one could say he had a significant source of off-farm income.
