Dyes have been widely used as coloring agents in foods, pharmaceutical drags, and cosmetics. Natural colors are obtained from various natural materials or foods, whereas synthetic colors are originally manufactured from coal tar or purified oil products. Among synthetic dyes, azo dyes, which contain an azo group (-N=N-) in the molecular structure, have potentially adverse effects on human health, such as the ability to cause carcinogenic diseases, allergies, multiple sclerosis, and brain damage.2'3 Therefore, several countries have strictly controlled the use of dyes.
