Here in Columbia County in upstate New York, a few Americans are making big changes in their food buying and eating habits - changes that demonstrate, in teal life, how agriculture is the linchpin of the economy. Over the last ten years new food production and distribution organizations have sprung up here, from pre-order consumer cooperatives, to community supported agriculture (CSA) farms, to even local barter currency. All this catalyzed by the growing demand for organically and locally grown food. Though few in numbers now, these new organizations are healthy, smart enough to control their own growth, and are replicating themselves at a steady rate. Lately it's become apparent that by re-creating the means to serve a basic need - for quality food -we are actually rebuilding our local economy from, literally, the ground up.
