My most desired food experience for summer is to eat a perfect sun-warmed, fully ripe, just-picked Connecticut peach. Connecticut sits near the northern rim of the Adantic seacoast crescent peach region that extends south to Georgia, an area capable of producing this most delicious delight of summer. The peach is a fruit of the temperate zone. Though it prefers warmer areas, peach trees can survive temperatures as low as -15 degrees Fahrenheit. Peach trees require a resting period—a chilling time—for at least two months before they can produce leaves and flowers in the spring.
