摘要

Production of fructose-glucose syrup from Jerusalem artichoke tuber extract with the use of.immobilized yeast (Kluyveromyces marxianus CBS-397) cells was studied. The biocatalyst operates successfully within the range of 37-40 deg C and pH 4.0-5.5 and processes 10% inulin solution at a rate of 0.5 h~(-1). The calculated half-activity time of the immobilized cells was within 100-110 days.
