Respiration and ethylene production rates of Chinese pears (Pyrus ussuriensis var. sinensis cv. Yali), stored in CO2-enriched and/or O2-reduced atmospheres, were investigated. The effects of polyethylene film packaging on fruits in storage were alsoinvestigated. Oxygen uptake and ethylene production in fruits stored at 20鳦 decreased with increasing CO2 concentrations of up to 40%. Ethylene production under 60% CO2 was inhibited, whereas O2 uptake was promoted, and fruits developed a physiologicaldisorder. Under the same storage conditions, O2 uptake and ethylene production consistently decreased with decreasing O2 concentration. When O2 was decreased to <5%, CO2 output exceeded O2 uptake, suggesting that anaerobic respiration was occurring. Respiration was inhibited in fruits stored at 10 or 20?under 5% CO2 + 3% O2 for the first 4 days of storage, and then increased suddenly and fruits developed a physiological disorder. The storage life of fruits packed in film with soda lime at 10? in which O2 was ?%, was prolonged by ? month compared with fruits packed in perforated bags. Concentrations of >5% CO2 and/or <5% O2 inside plastic bags caused ethanol accumulation in fruits and the development of physiological disorders, thereby shortening the storage life of fruit. It is suggested that Yali fruits are sensitive to CO2-enriched and O2-reduced atmospheres, and that 2% CO2 and 8% O2 are optimal for long-term storage.
