The effects on serum and hepatic lipid profiles of rats fed a high fat and high cholesterol diet which included meat from chickens that had been fed a diet including hwangki-beni koji sauces (HBS) were investigated. Rats were divided into groups (5 rats per group): normal control diet (NC); high fat and high cholesterol diet (HFC); HFC plus 15% meat from chickens fed a basal diet (HFC-BS); and HFC plus 15% meat from chickens fed an HBS supplemented diet (HFC-HBS). The rats were fed the experimental diet for 5 wk. Feed intakes in the HFC-HBS group were higher than those of the HFC and HFC-BS groups, whereas body wt. gain and feed efficiency ratio of the HFC-HBS group were lower than those of the HFC and HFC-BS groups. Serum alanine aminotransferase and aspartate aminotransferase activities of the HFC-HBS group were significantly lower than those of the HFC and HFC-BS groups. Levels of serum triglyceride, total cholesterol and LDL-cholesterol in the HFC-HBS group were 34.06%, 6.28% and 31.00% lower than those of the HFC-BS group, respectively, whereas HDL-cholesterol level and atherogenic index in the HFC-HBS group were 1.72x higher and 2.52x lower, respectively, than those of the HFC-BS group. Levels of hepatic total lipids, triglyceride and total cholesterol in the HFC-HBS group were 9.53%, 5.25% and 22.20% lower than those of the HFC-BS group, respectively. Results for liver morphology showed that hepatocytes of the central vein lesion and intact hepatic cell plate are preserved well from steatosis in the HFC-HBS group, whereas the hepatocytes in the HFC and HFC-BS groups are distended by accumulation of multiple fat droplets, and sinusoids are occluded. Results suggest that diets including meat from chickens fed hwangki-beni koji sauce may have antiobesity, anticholesterol functionality and also lower the anti-atherogenic index in high fat and high cholesterol diets.
