摘要

The identification of commercial shrimp speciesis a relevant issue to ensure correct labeling, maintainconsumer confidence and enhance the knowledge of thecaptured species, benefiting both, fisheries and manu-facturers. A proteomic approach, based on 2DE, trypticin-gel digestion, MALDI-TOF MS, and ESI-MS/MS analy-ses, is proposed for the identification of shrimp specieswith commercial interest. MALDI-TOF peptide mass fin-gerprint from arginine kinase tryptic digests were usedfor the identification of seven commercial, closely relatedspecies of Decapoda shrimps. Further identification andcharacterization of these peptides was performed by CIDon an ESI-IT instrument, database search and de novosequence interpretation, paying special attention to dif-ferential, species-specific peptides. Fisheries and manu-facturers may take advantage of this methodology as atool for a rapid and effective seafood product identifica-tion and authentication, providing and guaranteeing thequality and safety of the foodstuffs to consumers.
