摘要

The change in the biochemical indicators was compared, both of fresh biologically pure fruits and dried slices of chaenomeles, which have been dried in a solar fruit dryer.The experiment was conducted in RIMSA - Troyan during the period of 2012.The Chaenomeles fruit is of a great value due to its contents of Vitamin C, aromatic compounds, organic acids, anthocyanins, P-active substances etc.It has been proved that the ascorbic acid and the anthocyanins are preserved better in form 1 and form 3 of Chaenomeles in the dried fruits, in comparison of to the fresh ones. It has been registered a reduction of the total, invert sugar and acids in the dried slices to the percentage of dry matter in the three studied forms.
