Three different combinations of beef and turkey mince (100% beef; 90% beef, 10% turkey; and 70% beef, 30% turkey) were evaluated for sensory colour and texture differences in frozen and grilled forms by a taste panel of 115 untrained consumers. Results are discussed in relation to consumer acceptance and liking of the 3 products in the frozen and grilled form, the influence of previous home experience with mixed beef and turkey mince products and the likelihood of puchasing the combined beef and turkey products.
