Identification and quality evaluation of two wild mushrooms in relation to Agaricus bisporus from Jordan.

Two wild mushrooms collected in Jordan and a farmed mushroom (Agaricus bisporus) from a local market were evaluated for their physical properties and chemical and mineral composition. The wild mushrooms were identified as Boletus erythropus and Entoloma clypeatum. Results showed that the wild mushrooms were edible and varied significantly in their physical properties, and chemical and mineral composition. E. clypeatum had low protein content, but had the highest fat and energy values, while B. erythropus had higher content of fibre and carbohydrates. A. bisporus had the highest protein content (4.04%) and the lowest calorie value (26.38 kcal/100 g). B. erythropus was the largest in cap diameter (13.6 cm). Although all the mushrooms varied in mineral contents, they were all good sources of Ca, K, Mg, Fe, Zn and P.
