摘要

Physicochemical properties and antioxidative activity of oils from pomegranate seeds were investigated. 10 pomegranate cultivars were tested. The most abundant minerals were Mg, K and Na. Amounts of ash, protein and phenols present were 1.8-2.3, 6.6-13 and 0.2-1.0%, respectively. Contents of moisture and volatile matter were in the ranges 0.25-0.4 and 0.10-0.19%, respectively. The oil with the highest phenols content (from var. Poste Seia) was able to retard the oxidative deterioration of soybean oil at 60 degrees C, in a dose dependent manner at concn. in the range 100-350 ppm.
