摘要

The use of low-weight but heat unstable packaging materials makes the filling of hot beverages impossible. Beverage manufacturers have to use constant and quick quality controls for their products, to guarantee a long storage life. A real-time PCR system, used to detect spoilage organisms in beverages, is presented. The screening system for the analysis of low concentrated yeasts and moulds in juices and fruit drinks is described. The principle of real-time PCR and the advantages of this method, against the classical microbiological quality control system, are also shown.
