Obtaining high quality carcases in a processing plant, starts with sourcing good quality birds. The objective is to keep the number of condemnations, such as caused by cellulitis, at a lowest possible level. That can be achieved by minimising aggression to the birds, which as a result keeps levels of E. coli infections low. In the poultry industry the several phases that integrate the live production and the processing chains have a marked interrelationship and inter-dependency. As a consequence of this arrangement, the effects of the several events that may take place along either chain are not necessarily observed right after they happen. Contrarily, like a shock wave in a tsunami, their effects are commonly felt at a distance from their origins.
