One of the Soil Association's driving aims is to ensure that good food is available to everyone in society. And for us good food is not just organically grown, minimally processed, fresh and seasonal, but is also fairly traded - fairness being one ofthe International Federation of Organic Agriculture Movements' (IFOAM) four principles of organic agriculture. New figures from the Co-op Group show consumer spending on ethical products has increased during the economic downturn. During 2010, sales of Fairtrade food rose 36%, with overall sales of goods branded 'sustainable' up by 8.8%.
