In this study, yeast and mould counts were determined in air samples collected from 6 government and 6 private dairy plants in Namakkal, Salem, Erode, Coimbatore, Krishnagiri and Tiruchi districts in Kerala, India [date not given]. It was shown that the mean yeast and mould counts in the milk processing, cream and butter sections of the organized dairy plants were 2.389+or-0.156, 4.083+or-0.304 and 6.083+or-0.325/ft3, respectively. The corresponding values in the private plants were 2.331+or-0.149, 7.361+or-0.533 and 11.72+or-0.492/ft3, respectively. There were significant differences in yeast and mould counts among the cream and butter sections between organized and private plants. Two (28.57%) of the 7 Aspergillus flavus isolates from both types of plants produced aflatoxins in the yeast extract sucrose broth, while 1 (11.11%) of the 9 Penicillium citrinum isolates from organized plants and 2 (22.22%) from private plants produced citrinin.
