Bacteriological quality of market goat meat.

This study was conducted to assess the bacteriological quality of goat meat sold in markets in the Faizabad district, India. 110 samples (50 meat, 20 lymph nodes, 20 swabs from butchers' knives and 20 swabs from butchers' hands) were collected from different goat meat shops. A total of 98 bacterial isolates were obtained in this study and identified as Staphylococcus aureus, Streptococcus faecalis [Enterococcus faecalis], Escherichia coli, Salmonella sp., Proteus vulgaris, Klebsiella pneumoniae, Campylobacter jejuni, Micrococcus sp., Bacillus cereus and Pseudomonas aeruginosa. The total viable, coliform, E. coli, Salmonella and S. aureus counts in goat meat samples were 6.80+or-1.70, 2.70+or-1.12, 0.22+or-0.48, 0.06+or-0.25 and 2.07+or-1.38 log10 cfu/g, respectively. Based on the total viable, coliform, E. coli, Salmonella and S. aureus counts, 56, 40, 76, 94 and 60% of the meat samples showed values within the permissible limits, respectively.
