Many government agencies and trade associations around the globe now have food safety guidelines in place or have developed Codes of Practice to ensure that eggs are safe to eat. These food safety initiatives coincide with a wave of promotional campaigns, reinforcing the value of eggs as a nutritious, healthy food product. In the UK, the value of the egg market is reported at 510mn pound and 27 million eggs are consumed each day. The Lion code of practice, developed by the British Egg Industry Council in 1993, is believed to represent the highest standard of food safety for eggs anywhere in the world. In 1998, the Lion Code was revised to include a 4mm pound vaccination programme against salmonella enteriditis of all hens producing Lion Quality Eggs, complete traceabiltiy of eggs, hens and feed and dete-coding of all Lion Quality Eggs. Already 70 percent of the UK's eggs are marked with the Lion Quality Symbol.
