摘要

In black tea manufacture the optimum dhool temperature should be between 25 and 27°C to achieve proper fermentation. During our surveys, the temperature recorded in the majority of the factories was more than 30°C and in few instances the temperature was even 39°C. ln addition to temperature, application of fresh air to the rolled leaf is essential to achieve proper fermentation. In orthodox manufacture the rolling process is carried out by batch method and most of the time the rolled leaves are inside the jacket. The orthodox roller acts more like a closed container and circulation of fresh air inside the jacket is restricted. Therefore, to supply fresh air to the roller jacket and to reduce leaf temperature during rolling, a cooling system wasdesigned.
