The United States Food and Drug Administration (FDA) and the food industry share the responsibility of ensuring that all shelf stable canned foods sold in the US are safe and fit for human consumption. The FDA regulations and recommendations can be found in Chapter 21 of the Code of Federal Regulations Parts 108, 110, 113 and 114. These regulations cover key areas including: the establishment of a thermal scheduled process, the delivery of that process, the documentation of the process, and how a facility should handle process deviations.
