A heaping helping of holiday waste

Millions of North Americans are looking forward to the upcoming holiday celebrations with family and friends. Beyond the goodwill and cheer, an integral part of these festivities, typically, is a large meal, with everyone gathered around the dining room table filled with well-prepared food. Once everyone is done and the dishes are cleared, plates are scraped into the garbage and whatever leftovers cannot be re-heated, also finds its way into the trash. The chances are good that these plate scrapings will wind up in a landfill, along with those of your neighbors and businesses in the community. And often times, these food scraps are transported long distances before they wind up in a landfill.
