To compound issues for minimally processed sweeteners, any natural variation may not be removed during processing. Some of these products are still produced and sold from less-developed countries and can vary greatly in purity and quality. Lastly, as opposed to the product that they are replacing, these products tend to be more expensive, some quite a bit more expensive. Add to this additional processing constraints, and products made with these minimally processed sweeteners may be significantly less profitable than current products. Exact matches for current products may not be achievable, but with careful formulation and processing, high-quality products that contain these novel sweeteners can be marketed to that segment of interested consumers.
