Characterization of the milk fat globule membrane proteome in colostrum and mature milk of Xinong Saanen goats

Xinong Saanen goat milk is a major source of milk inthe Chinese dairy industry. Milk fat globule membrane(MFGM) proteomes of goat colostrum and maturemilk were analyzed and compared using proteomictechnology. A total of 543 and 585 proteins were identifiedin goat colostrum and mature milk, respectively.Functional category analyses revealed that most of theMFGM proteins in both colostrum and mature milkwere related to phosphoprotein and acetylation. The biologicalprocess of translation, cellular component of extracellularexosome, and molecular function of poly(A)RNA binding were the main gene ontology annotationsof both colostrum and mature milk. Pathways associatedwith disease and genetic information processinginvolved large number of proteins in colostrum and maturemilk, and more metabolism-related pathways wereobserved in mature milk. Protein-protein interactionnetwork analyses showed that ribosome was abundantin both colostrum and mature milk. Colostrum showedmore functions associated with protein processing inthe endoplasmic reticulum, whereas mature milk hadmore oxidative phosphorylation functions. The resultscould provide further understanding of the unique biologicalproperties of MFGM proteins of goat colostrumand mature milk.
