Detection of goat's milk in milk mixtures and in matured sheep's milk cheese utilising polyclonal antibodies and an indirect ELISA. For the detection of goat's milk in milk mixtures and in matured sheep's milk cheese polyclonal antibodies have been obtained in rabbits for the caseins of goat's milk (CC). The anti-CC antibodies are biotynilated and are made species-specific mixing them with the caseins of the goat's milk immobilised on polystyrene plates, they are detected utilising an extravidinaperoxidase conjugate. The colour developed by the enzymatic hydrolysis of the substrate permits relating its intensity to the various percentages of goat's milk and cheese incorporated in the mixtures. Given that sheep's milk achieves a higher price in the market than goat's milk the addition of this latter to the former may be tempting. The development of a method of efficient, quick and cheap analysis of identifying the animal origin of milk would be of extraordinary interest in the detection of adulterated lactic products and offering greater protection to the consumer.
