Rapid quantitative method for salmonella detection in poultry using PCR

Public health organisations and regulatory agencies have recently redoubled their efforts to improve salmonella control. The USDA Food Safety and Inspection Service (FSIS) issued a regulation in August 2014 known as the Final Rule for Modernisation of Poultry Inspection. The Rule authoritatively designates salmonella as a food safety hazard for poultry processors and focuses on preventative inspection practices by allowing USDA-FSIS to examine sanitation procedures, review records and collect test samples for analysis. Poultry processors need rapid, cost effective strategies for complying with new sampling and testing regulations. Controlling salmonella in the food industry is challenging because the bacteria naturally come in contact with agricultural and animal-based products. Furthermore, studies seem to correlate the number of salmonella cells consumed with the severity of infection, but it is unclear how many cells are required to cause salmonellosis.
