Good food need not be a stuffy affair, as many hotels move away from formal settings to make fine dining fun. Early this year Four Seasons Hotel Chicago introduced Allium, a restaurant committed to seasonal, local cuisine as well as fun fare like a house-made Chicago-style hot dog. Also focused on fun is Four Seasons Resort Scottsdale atTroon North in Arizona, which was set to debut Proof, an American canteen, at press time.
