The affair of ice cream

The role of ice cream in our daily lives is multiple. From feeding a toddler the first vanilla ice cream as a nutritious milk-based dessert with low aller-genic risk, to the energy dense desserts served at nursing homes to increase the energy intake of elderly people, ice cream follows us throughout our lives. One of the biggest consumer trends currently is health and nutrition, together with convenience. Ice cream fits neatly into both categories: since it is based on milk, one of the basic elementary nutritional food sources, and is ready to be eaten frozen, thus fulfilling our demand for a convenient nutritious food. However, an increasing number of people are experiencing a down side of being able to buy and consume all the convenience food they desire, including excessive calorie intake which inevitably leads to weight gain.
