Xoco (pronounced sho-koh) is a company with the goal of producing the best flavored cocoa beans in the world.rnFlavour potential is derived from the genetics of the cocoa tree. Cocoa trees (species: Theobroma cacao) can be divided into three different morpho-geographical groups based on genetic origin, pod morphology and size, colour and flavour of beans:rn1. Forastero rn2. Trinitario rn3. Criollo rnProbably over 95 per cent of all the trees, are of the Forastero group. These trees do not have the potential to produce flavour beans. Some exceptions produce a good rough chocolate taste, but none produces the complex, gourmet flavours of fine cocoa.
