Feeling fruity

There is a developing trend for more 'natural' confectionery and clean labelling in response to consumer perception that natural products are healthier, tastier and of better quality. Freeze dried fruits contain no additives and are pure - the only thing that is removed is the water. The trend for more nutritious, healthy, additive-free products is likely to gain momentum during 2014 and as a result freeze dried fruit is sure to appear in a wide selection of confectionery applications.
