'6T'实务管理在高校餐饮现场管理中的应用——以云南省某高校为例

     

摘要

College catering is directly related to the physical health of teachers and students and the stable development of the college. With the analysis of the development situation of a university in Yunnan Province, it can be seen that the current level of catering management is not high, the staff quality is generally low, some canteen hardware facilities configuration does not meet the requirements of food processing process, warehouse management is not standardized, and canteen health condition is worrying. To improve the level of management of university catering work, it is necessary to innovate catering methods. 6T practice management is an effective way to realize fine management of university catering. Through the implementation of 6T practice management, the college catering work efficiency has been improved, cost reduced, and the quality of staff generally improved. The canteen environment becomes beautiful, clean and tidy, food safety is guaranteed, and the service quality has been continuously improved.%高校餐饮工作直接关系到师生的身体健康和学校的稳定发展.结合云南省某高校餐饮发展状况的分析可知,目前高校餐饮工作现场管理水平不高,员工素质普遍偏低,部分食堂硬件设施配置不符合食品加工流程的要求,库房管理不规范,食堂卫生状况堪忧,要提高高校餐饮工作现场的管理水平,需创新餐饮管理方法,6T实务管理的引入是实现高校餐饮现场管理精细化的有效途径,通过实施6T实务管理,使得高校餐饮工作效率得以提升,成本有效降低,员工素质普遍提高,食堂环境优美、卫生整洁,食品安全得到保障,服务质量不断提高.
