The pyrolysate of lycopene at 300,500 and 800 °C in nitrogen of 9% oxygen was analyzed by pyrolysis gas chromatography and mass spectrometry (Py-GC-MS). The results showed that; 1 ) The pyrolysates at the three pyrolysis temperatures always contained olefin compounds and a small quantity of lycopene, and the relative content of olefin compounds increased significantly with the rise of temperature. 2) lower pyrolysis temperature facilitated the generation of aldehydes, ketones and alcohols. 3 ) The pyrolysis products at all the test temperatures contained some key aroma compounds, such as geranial, 1 -methylacetophenone, pseudo-ionone, farnesol, damascone and calacorene, etc. 4 ) The kinds and yields of indenes and naphthalenes increased gradually with the rise of pyrolysis temperature.%采用GC/MS法分析了番茄红素在9%氧气的氮气中300,500,800℃下的裂解产物.结果表明:①3种温度下裂解产物中均含有烯烃类化合物和少量的番茄红素,而且随着裂解温度的升高,烯烃类化合物相对含量大幅增加;②低温下裂解有利于醛酮醇类化合物的生成;③3种温度下的裂解产物中都含有一些重要的香味物质如香叶醛、1-甲基-苯乙酮、假紫罗兰酮、金合欢醇、大马酮及去二氢菖蒲烯等;④随着裂解温度的升高,茚及萘类化合物种类及生成量逐渐增多.
