盐碱地甘薯块根粉糊化特性研究

     

摘要

Sweet potato can grow normally in sandy loam of Yellow River Delta with the average salt content as 0. 31%. The soil nutrient can basically meet the need of sweet potato, and the cultivation of sweet potato is benefit to decreasing salt content in plough horizon of soil. There were significant differences in viscosity characteristics among different genotypes of sweet potato cultivated in the same ecological environment. The peak viscosity, through viscosity, final viscosity and the mean peak time from Dongying point were higher than those from Taian point, while the breakdown and gelatinization temperature were lower than that from Taian point. The mean gelatinization temperature of sweet potato flour from Dongying saline land was 79. 08℃. With the variation range as -3. 52% ~ 1. 85% , while that was 79. 36℃ from Taian with the variation range as -3. 80% ~2. 80%. The gelatinization properties of starch type sweet potato cultivars, such as Xushu 18 and Xushu 22, was relatively stable, while that between edible sweet potato cultivars was different obviously.%在黄河三角洲砂壤土盐分平均含量为0.31%情况下甘薯能够正常生长,其土壤养分基本可以满足生长需要,而且种植甘薯有利于降低土壤耕作层的含盐量.同一生态环境不同基因型甘薯品种之间的黏度特征值差异很大,达到显著水平;供试11个品种在东营试验点的高峰黏度、低谷黏度、最后黏度、反弹值、峰值时间平均值均高于泰安试验点;稀懈值和糊化温度平均值低于泰安试验点.东营盐碱地甘薯块根粉糊化温度平均值为79.08℃,变异幅度为-3.52%~1.85%;泰安试验点糊化温度平均值为79.36℃,变异幅度为-3.80%~2.80%.不同类型间比较发现,以徐薯18和徐薯22为典型的淀粉型品种,糊化特征相对稳定,而食用型品种间差异比较大.
