[目的]确定板栗仁酶促褐变产物的主要成分.[方法]利用提取纯化后的板栗酶促褐变产物组分作为试材,采用HPLC法对其进行定性和定量分析;采用NMR法进一步确定板栗酶促褐变产物主要成分.[结果]HFLC法初步断定5%(w/v)碳酸氢钠水溶液萃取组分为大黄酸:5%(w/v)碳酸钠水溶液萃取组分为大黄素;核磁共振试验测定的2个组分的HNMR和CNMR图谱分析结果确定了板栗仁酶促褐变产物为大黄酸和大黄素.[结论]板栗仁酶促褐变产物主要是蒽醌类化合物,其主要成分为大黄酸和大黄素.%[Objective] The major constituents of enzymatic-browning products of Castanea mollissina kernel were studied in this experiment. [Method] The compositions of chemicals (anthraquinone) in the enzymatic-browning products extracted from Castanea mollissina kernel were analyzed by HPLC method and NMR method. [Result] Rhein extracted by 5%(w/v) aqueous sodium bicarbonate from the enzymatic-browning products and emodin extracted by 5%(w/v) aqueous sodium carbonate from the left products were confirmed by HPLC method and NMR method together. [Conclusion] Two kinds of anthraquinones were detected in the enzymatic-browning products of Castanea mollissina kernel. Rhein and emodin are mainly contained in the components.
