综述国内外畜禽汤类产品加工技术研究情况,主要介绍畜禽汤类产品的营养及食疗功效、风味、加工工艺及影响汤品质的主要工艺,并简要分析畜禽汤类产品加工的发展趋势,旨在为开发畜禽营养汤系列产品提供参考。%In this paper, we review the current status of research on processing technologies for livestock and poultry soup at home and abroad. Our review is mainly concentrated on nutrient composition, dietary function, flavor, processing technology and key processing procedures that affect the quality of soup. In addition, future trends of the industry are briefly discussed. We hope that this paper can provide references for further development of the industry.
